If this thing is 7.5 inches wide, does that mean it's gonna fit standard mounting surfaces, or is there some wiggle room I need to account for?

Industry-standard surfaces should accommodate this Vickers valve just fine. It's designed to be easily mountable, so you shouldn't have any major headaches getting it set up.

Got a press line running hydraulic directional valves and we're looking at this Vickers DG5V 10 W 8C E V M WL B 10 as a replacement. does it handle high flow or is it more of a light-duty unit?

Seven hundred liters per minute is the rated flow on this valve, so it's well suited for demanding press applications where you need serious volume moving through the system. That puts it in heavy-duty territory, not a light-duty unit by any stretch. Press and primary metal work are both listed application types for it, so you're in the right ballpark for that kind of line.
