Flow rate on this thing is listed at 700 litres per minute, that kind of capacity put it in range for press or heavy machine tool work, or is that more of a ceiling you'd rarely hit in practice?

For press applications and heavy machine tool circuits, 700 litres per minute is well within the territory this valve was built for. That rating represents the upper end of what the valve can handle, so most installations will run comfortably below it. The DG5V-8 series is explicitly rated for press and machine tool environments, so you're not stretching it by using it there. Whether you're running near peak flow or well under it, the valve is sized to handle the demand without being pushed to its limits in typical service.
