flow rate on this unit is listed at 80 liters per minute -- is that enough to run a press application without bottlenecking the system?

For press applications, 80 liters per minute is a solid working flow rate. Vickers lists press as one of the intended applications for this valve, so it's built with that kind of service in mind. Whether it becomes a bottleneck depends on what your system demands upstream and downstream, but the valve itself is rated to handle that throughput without being the weak point in the line.

Can this handle hydraulic fluid with no problem, or do I need special seals?

Buna-N seals are used in this valve, so it should work fine with standard hydraulic fluids.
