flow rate on this thing is listed at 700 liters per minute, that enough to handle press or die casting work without choking the system?

For press and die casting applications, 700 liters per minute gives you solid headroom. Those environments push hydraulic systems hard, and this valve is specifically listed for both die casting and foundry use as well as press applications, so it's built with that kind of demand in mind. As long as your system is sized to move that volume, you won't be fighting the valve for flow capacity.

What kind of hydraulic fluid works best with this valve, or does it matter much?

Given the Buna-N seals, this valve is compatible with standard hydraulic fluids; petroleum-based fluids are a safe bet. Just make sure the fluid is clean and appropriate for the operating temperatures you expect.
