flow rate on this valve is listed at 115 litres per minute, is that enough to handle a die casting setup without choking out?

For die casting applications, 115 litres per minute is a solid working capacity. That flow ceiling is well within the range most die casting circuits operate at, so you shouldn't run into flow restriction issues under normal conditions. The valve is specifically listed for die casting and foundry use, so it's built with those kinds of demanding cycles in mind. Buna-N seals also hold up well with the hydraulic fluids common in that environment.
