flow rating on this thing is 700 LPM -- that handle continuous production runs on a press or is that more of a peak figure?

700 litres per minute is the rated flow capacity for this valve. Press applications are actually one of the listed uses for it, so running it in that kind of environment lines up with what it was built for. Just make sure your system is sized to keep flow within that rated limit during operation and you should be in good shape.
