Flow rate on this one says 100 liters per minute -- is that enough for most standard hydraulic circuits running pressure relief setups?

For a lot of general hydraulic pressure relief applications, 100 liters per minute handles the job just fine. Where you might run into a ceiling is in higher-demand systems pushing significantly more flow through the circuit. As long as your system isn't exceeding that rated flow, this valve should regulate and relieve pressure without issue.

Will this pressure valve work alright in a hydraulic system that sees a fair amount of moisture?

It's moisture resistant, so it should hold up well in those conditions.
