pump's listed for mining and oil and gas use, does it hold up in metal forming and conveyor setups too, or is that pushing it?

Vickers built the PVH98CLF2S11C25V31 with those environments in mind alongside the heavier industrial uses. The torque-limiting feature is a real asset in those settings because conveyor and forming equipment can put uneven load demands on a hydraulic pump. You're not stretching it by running it there.
