flow rate on this thing tops out at 40 liters per minute -- is that gonna hold up running a press setup all day or does it start struggling under that kind of load?

Forty liters per minute is the rated flow capacity for this valve, and press applications are actually one of the listed use cases for it. Running near the top of that range continuously is a different story than occasional peaks, so keeping your system demand comfortably below that ceiling will give you more headroom and longer service life from the seals and internals. The Buna-N seals are a solid choice for general hydraulic fluid compatibility, but how the valve holds up under sustained high-flow press duty depends heavily on your system pressure, fluid cleanliness, and operating temps staying within range.

Will this valve work okay in a machine shop environment where it might get splashed with coolant sometimes?

Application-wise, it's designed to hold up in environments like machine shops, plus die casting, marine, and offshore applications. The Buna-N seals should offer decent resistance to typical coolants, but continuous submersion probably wouldn't be ideal.
