flow rate on this one says 80 litres per minute, that metric or is there a GPM equivalent I should be thinking about?

80 litres per minute works out to roughly 21 gallons per minute, so for most general-purpose hydraulic circuits that's a solid working range. Just keep in mind the rating is listed in metric, so if your system specs are in GPM you'll want to run that conversion before sizing anything out.

Just wanna make sure this'll work with regular hydraulic fluid, like what I use in my tractor?

It's designed for use with petroleum-based hydraulic fluids, thanks to the Buna-N seals. So, yeah, should be just fine with standard hydraulic fluid.
