flow rate on this one says 60 liters per minute, that enough for most machine tool setups or is it pushing the limits?

For most standard machine tool applications, 60 liters per minute is a solid working capacity. It gives you enough headroom to handle typical directional control demands without running the valve at its ceiling. Where you'd start feeling the pinch is in higher-throughput systems that are moving fluid aggressively through multiple circuits at once. For general industrial machine tool use though, that flow rate lands right in a comfortable range.

Is this Vickers valve gonna hold up in a machine shop environment with some grime and coolant flying around?

Given the Buna-N seal material, it's designed to offer enhanced resistance to external leakage and contamination, so it should hold up reasonably well in that kind of environment. Keeping it clean will help extend its life, of course.
