flow rate on this thing says 800 liters per minute, is that enough to handle a high-demand hydraulic circuit without the valve becoming a bottleneck?

At 800 liters per minute, that's a pretty serious flow capacity. Most high-demand industrial hydraulic circuits won't come close to pushing that kind of volume through a single pressure control valve, so bottlenecking is unlikely to be a concern in the majority of setups.
