Will this handle a flow rate of 120 gallons per minute?

It sure will. This Vickers pressure control valve can handle a flow rate of up to 454 liters per minute, which is more than 120 gallons.

flow rate on this thing is listed at 454 liters per minute -- is that enough for most standard industrial hydraulic setups or is that on the higher end?

For most industrial hydraulic circuits, 454 liters per minute puts this valve well into the high-capacity range. A lot of standard systems run considerably below that ceiling, so unless you're pushing a very large multi-actuator setup, you're unlikely to hit the limit in everyday use. It gives you solid headroom without having to worry about the valve becoming your bottleneck.
