flow rate on this thing listed as 114 liters per minute but the features say 300 L/min max -- which number applies to this specific valve?

The 114 liters per minute figure is the rated flow for this particular valve configuration. The 300 L/min and 5000 psi figures represent the upper ceiling of the RV5-10 series overall, not what every model in that family is spec'd to handle. For your sizing and system calculations, 114 L/min is the number to work with on this unit.
