runs up to 5000 psi on this thing, but what's the actual flow rate it's rated for during normal operation?

At operating conditions, the valve is rated for 30 liters per minute. The 300 L/min figure you might see listed is the maximum flow capacity the valve body can handle, not the working flow rate. For day-to-day operation in something like a harvester or refuse hauler, the 30 L/min rating is the number to plan around.
