rated to 5,000 psi and 60 gpm -- that's more capacity than most valves in this class. what's the actual flow rate this thing runs at in practice?

At operating conditions, the reported flow rate on this valve is 34 litres per minute. The 227 L/min and 5,000 psi figures represent the upper limits of what the valve is rated to handle, not the typical working output. So if your circuit is sized around that 34 L/min figure, you're in the right ballpark for normal operation.
