Will this handle hydraulic fluid in a log splitter?

This Vickers check valve is rated for a maximum pressure of 350 bar, which is about 5000 psi, so if your log splitter operates within that range, it should be suitable. It's also good for flow rates up to 227 liters per minute.

running a couple of these on a refuse hauler setup and just want to make sure i got the right one -- what's the max pressure this valve handles?

Rated for 350 bar, which works out to 5000 psi. For a refuse hauler application that's a solid pressure ceiling, and it falls right in line with what this CV11-10 series was built for. You should be in good shape there.
