Running a 12-volt system on a refuse hauler and need a normally open solenoid valve that can hold up to some real pressure. This one rated for 5000 psi?

Rated at 350 bar, which works out to 5000 psi, so yes it'll handle that without issue. The valve body is hardened and ground steel, which holds up well in the kind of high-cycle, high-pressure work refuse haulers put these through. Being normally open means flow passes through when the solenoid is de-energized, so keep that in mind when wiring it into your circuit.
