Can this valve handle the pressures in my hydraulic system, which sometimes spike a bit over 5000 psi?

It's rated to handle pressures up to 350 bar, which is about 5000 psi. You'll want to make sure those spikes don't go too far over that for too long, or it could shorten the valve's lifespan.
