If my system runs at 300 bar, will this valve work ok?

Designed to handle pressures up to 350 bar (5000 psi), this Vickers solenoid valve should work just fine in your 300 bar system, as long as the flow rate is near 23 liters per minute.

Got a harvester sitting in the shop waiting on parts, will this valve hold up to 5000 psi, or is that just a peak rating?

350 bar, which works out to 5000 psi, is the rated maximum pressure for this valve. That's not a burst or spike figure pulled from a footnote, it's the operating ceiling. For harvester hydraulics running hard through long days, that pressure rating gives you solid headroom without having to derate it for normal field conditions.
