runs at 5000 psi on our harvester circuit right now, this valve handle that kind of pressure steady?

Rated to 350 bar, which works out to 5000 psi, so yes, it lines right up with what you're running. The RV5-10 series was built with mobile equipment like harvesters in mind, so that pressure range isn't pushing the limits here, it's squarely in the valve's wheelhouse.
