Running this on a 12-volt system in a refuse hauler setup. Just want to make sure it'll hold up to 5000 psi before I pull the trigger on ordering.

Rated at 350 bar, which works out to 5000 psi, so yes it'll handle that pressure. The valve is built with hardened and ground steel construction, which holds up well in demanding mobile applications like refuse haulers. That pressure rating is the maximum, so as long as you're operating at or below that you're in good shape.
