Is this valve generally okay for harvester hydraulics, or is it more for stationary industrial stuff?

This Vickers solenoid valve is indeed suitable for harvesters, as well as refuse haulers and general mobile and industrial applications.

runs up to 5000 psi and handles 60 gallons a minute -- is that right for this valve?

Yeah, those numbers check out. Rated at 350 bar which works out to 5000 psi, and it'll move up to 227 liters per minute, which is right at 60 USgpm. That puts it in solid territory for heavy-duty mobile work like refuse haulers or harvesters where you need both pressure capacity and decent flow without hunting around for something bigger.
