Running this on a harvester that sees a lot of stop-and-go cycles through the season. Is the normally open setup gonna work the way I'm thinking, where flow passes through unless the solenoid kicks in to shut it off?

That's exactly how it works. In the de-energized state, flow passes freely through the valve. When the solenoid energizes, it shifts to the closed position and stops flow. For harvester applications with frequent cycling, that normally open behavior can actually reduce solenoid wear since the coil only draws power when you need the line blocked rather than when you need it open.
