runs 350 bar capable on this one or is that the upper ceiling you'd never want to hit regular basis?

That 350 bar (5000 psi) figure is the maximum rated pressure, so it marks the hard ceiling rather than a recommended continuous operating point. For day-to-day work on something like a refuse hauler or harvester, you'd want to stay below that ceiling to keep things running reliable long-term. The valve is built for demanding mobile and industrial duty, so it's not fragile, but max-rated pressure on any poppet-style valve is exactly that, a limit, not a target.
