Is this here valve something I could use on a mobile setup, like on a harvester or something similar?

runs at 24 volts and normally closed, that right for a valve that stays shut til it gets a signal?

Correct on both counts. Normally closed means the valve stays shut when the solenoid is not energized, and it opens when 24 volts is applied. That setup is real common in mobile equipment like harvesters and refuse haulers where you want the flow blocked by default unless the system calls for it.
