reckon this would work on a harvester or just for industrial stuff?

Running this on a refuse hauler that's seen better days, will the SV11-10-3-0-12DGH hold up to 5000 psi without giving me grief?

At 350 bar, which works out to 5000 psi, that's the rated maximum pressure for this valve. The hardened and ground steel construction is what makes it hold together under that kind of load. For refuse hauler applications specifically, it's one of the use cases this valve was built around, so you're not pushing it outside its intended territory.
