Got a harvester circuit that needs a fail-safe shutoff and I'm running close to 5,000 psi. This valve rated for that kind of pressure?

Running right up to 350 bar, which works out to 5,000 psi, so yes, it covers that range. The normally closed configuration also means the valve defaults to shutoff if power is lost, which is exactly the fail-safe behavior you want in a harvester circuit. Flow capacity goes up to 227 L/min (60 USgpm), so unless your circuit is pushing well past that, you've got room to spare.
