Got a refuse hauler that needs a normally closed solenoid valve rated for high pressure. This one run at 5000 psi, or is that just a peak number?

Running at 5000 psi is well within what this valve is built for. The maximum pressure rating is 350 bar, which works out to 5000 psi, so that figure is the ceiling, not just a burst rating. For a refuse hauler application, that headroom gives you solid working margins under the kind of pressure spikes those systems can throw at a valve.
