Got a harvester that's been running hot and I think the flow's all over the place. Would a pressure-compensated valve like this one actually keep things steady even when load changes?

Pressure-compensated flow regulators are built exactly for that kind of situation. When load pressure shifts around, the valve automatically adjusts to hold the flow rate steady. On this unit, that regulated flow is set at 60 liters per minute. So yeah, even with varying demand from the system, you're not going to see the kind of flow fluctuation that causes erratic operation or heat buildup from overcorrection.
