Flow rating on this one says 350 L/min max but the nominal is listed at 10 litres per minute, so is the 10 L/min the actual set point it ships at, or just a reference figure?

The 10 litre per minute figure is the nominal flow rate this valve is configured to regulate at. The 350 L/min ceiling is the maximum the valve can physically handle passing through it, not the regulated output. So in a fixed pressure-compensated setup like this one, you're getting a steady 10 L/min at the working point regardless of load pressure swings, as long as you stay within that 5,000 psi pressure rating.
