runs up to 5000 psi? that's what we're working with on our harvester setup and need to know this thing won't give out on us

Rated at 350 bar, which works out to 5000 psi, so yes it'll hold up to what you're running. The CV3-8V-P-0-060 is built specifically for that kind of demand in harvester applications, and the poppet-style construction handles those pressures without the wear issues you sometimes get with other valve styles. Flow capacity comes in at 227 L/min (60 USgpm), so you've got plenty of headroom there too.
