runs on 120 volt power, but is this thing normally open or normally closed when the solenoid ain't energized?

Normally open is the correct answer for this one. The SV131600120AGH is a 2-way, 2-position normally open valve, so flow passes through freely when the solenoid is not energized. Power it up and it shifts to block flow. That behavior is worth keeping in mind when you're planning your circuit logic, especially on mobile equipment where a power loss could affect how the system responds.
