runs at 5000 psi capable, but what's the flow this valve can actually push through before it starts causing problems?

Rated flow tops out at 300 liters per minute, which works out to 80 US gallons per minute. That's a solid ceiling for most mobile and industrial setups, including heavier equipment like refuse haulers and harvesters where flow demands can spike. As long as you're staying under that figure, the valve handles it without issue.
