Will this here check valve work okay on a dump truck's hydraulics?

Its applications include mobile equipment like refuse haulers, so it should work in a dump truck hydraulic system as long as the specs align. Just be sure your flow rates and pressures are within its limits.

Got a harvester that keeps losing pressure back through the valve line, would this CV3-8 check valve hold things in place, or is it more of a flow-control piece?

Check valves in this series are specifically built to stop backflow, so yes, that is the right function. The CV3-8 uses a poppet-style design, which gives you a positive seal when flow reverses. It is rated up to 350 bar (5000 psi) and handles up to 227 liters per minute, so it has plenty of headroom for most harvester hydraulic circuits. The 3/8" port size is worth confirming against your line fittings before you order, but for the application you described, this is the right category of valve.
