flow rate on this one says 60 L/min but the series goes up to 350 -- does that mean I can adjust it higher or is 60 the cap for this particular valve?

The 60 litres per minute figure is the rated flow for this specific valve. The 350 L/min rating applies across the broader PFR2-10 product series, not to this individual unit. So 60 L/min is what you're working with here. If your circuit needs more than that, you'd want to look at a different size within the series.
