Flow rate on this one is listed as 151 litres per minute, but the max capacity shows 350 L/min. Which number am I actually working with for my circuit?

Both numbers are real, just describing different things. The 350 L/min is the maximum flow capacity the valve is rated to handle, meaning the upper limit it can physically pass without issue. The 151 litres per minute is the fixed regulated output flow for this particular configuration. So if you're sizing your circuit around what this valve will deliver, 151 L/min is your working number.
