Running this on a refuse hauler setup, does the 12-volt solenoid hold up alright at 5000 psi, or is that pushing it?

At 350 bar, which works out to 5000 psi, that's right at the rated operating pressure for this valve. It's built with hardened and ground steel specifically because these kinds of applications put real stress on the internals. Refuse haulers are one of the listed applications for this valve, so running it in that environment is exactly what it was made for. The 12-volt solenoid pairs with that pressure rating without issue.
