reckon this would work on my old harvester?

Application-wise, this Vickers pressure control valve is used in harvesters as well as refuse haulers and other mobile and industrial applications.

What kind of pressure can this valve actually handle? Running a refuse hauler and want to make sure it ain't gonna be a weak link in the system.

Rated for 350 bar, which works out to 5000 psi. For a refuse hauler application, that's a solid ceiling and one of the reasons this particular valve gets spec'd into that kind of equipment. It's part of the PUV3-10 Series from Vickers, built under the Danfoss/Eaton umbrella, so it carries some real pedigree behind those ratings.
