running this on a refuse hauler setup -- does the pressure rating hold up at full load or is 5000 psi more of a peak number?

At 350 bar, which works out to 5000 psi, that is the maximum rated pressure for this valve. On refuse hauler applications, which this valve is specifically built for, that ceiling gives you solid overhead during peak demand cycles. Just make sure your system is sized to stay within that limit under sustained load, since maximum ratings reflect the upper boundary, not a recommended continuous operating point.
