Will this valve work okay on a mobile harvester?

runs on 115 volt power, but is this thing normally closed when the solenoid ain't energized?

Correct. At rest, with no power applied, the valve stays closed. Energize the solenoid at 115 volts and it opens to allow flow. That 2-way, 2-position normally closed configuration means your system defaults to a blocked state any time power is cut, which is exactly what most mobile and industrial setups need for safe operation.
