runs up to 5000 psi on our combine during peak season, this valve hold up to that kind of pressure without bleeding off?

Yeah, 5000 psi is right at the top of its rated capacity. The RV3-10-S-0-36/29.5 is built to handle up to 350 bar, which works out to exactly that. Harvesters are actually one of the primary applications it was developed for, so running it hard during harvest season is well within what it was made to do.
