flow rate on this valve is listed at 80 litres per minute, is that enough for running a press or die casting setup without choking the circuit?

For most press and die casting applications, 80 litres per minute gives you solid headroom. These are exactly the environments this valve was built around, so the flow capacity lines up well with typical demands in those circuits. As long as your system isn't pushing beyond that rate, you shouldn't run into flow restriction issues.

Can this handle standard hydraulic fluid okay, or do I need to get something special?

Buna-N seals provide reliable fluid compatibility with typical hydraulic media. So, standard hydraulic fluids should work just fine.
