flow rate on this one is listed at 60 L/min but the series goes up to 160, does that mean this specific valve is configured for 60, or can it be adjusted up?

For this particular part, 60 litres per minute is the specified flow rate for the configuration. The ERV1-10 series as a whole is rated up to 160 L/min (42 USgpm), but individual valves in the series come set for different flow ranges. What you're ordering here is the 60 L/min configuration, so that's what you're working with out of the box.
