flow rate on this valve -- is 80 liters per minute the max it'll handle, or is that more of a rated working figure?

Eighty liters per minute is the rated flow for this valve. Running a directional control valve consistently at or near its rated flow is common in production environments, but pushing beyond that figure can cause pressure drop issues and accelerated wear on the spool and seals. For most machine tool and press applications, 80 LPM gives you plenty of headroom if your system is sized right.
